Grizzly Slash is the first one that comes to mind...Had no trouble with him at all as zero, as long as you keep moving and don't stand in one spot for too long. Even his "rage mode" is easy to avoid.
...Then again, most of the bosses from X5 felt a bit easy in comparison to X4 and others. Could just me though.

Here are mine, going by game:
X1 - Chill Penguin - Just do a lot of jumping and you're good.
X2 - Wheel Gator - Same as Chill's.
X3 - Toxic Seahorse - Lots of dashing underneath him here.
X4 - Magma Dragoon - Bring the Ride Armor in and he's toast.
X5 - Crescent Grizzly - Do a lot of ducking. I found X was easier than Zero.
X6 - Commander Yammark - Those dragonflies aren't even that bad.
X7 - Ride Boarski - I don't know why, but he was exceptionally easy for me.
X8 - Gravity Antonion - Just dodge all of the blocks and you're fine.
